1. Preheat the oven to 190 °C.
2. Separate mushroom stems from the caps and chop them finely. Season the caps with salt and pepper.
3. Finely chop the garlic.
4. Melt butter in the frying pan and fry chopped garlic and mushroom stems.
5. Mix the fried mushroom stems with very finely chopped New Whites, sour cream and bread crumbs. Put the egg, pour the parsley, flavour with salt and pepper, and stir.
6. Stuff the mushroom caps with the filling and bake in the oven for about 15 minutes.

Cut the courgette lengthwise into thin slices (the most convenient option would be using a vegetable peeler) and fry them on a grill pan. Rolling up: season each slice of courgette with Mediterranean spices, put New Whites and a piece of sun-dried tomato, roll it up and decorate with a ribbon made of chive.

Cut an avocado in half, take out some pulp, so that to make space for salmon and New Whites. Put the avocado halves in a baking pan. Put stripes of smoked salmon and New Whites into the avocado, sprinkle with salt and pepper. Cook in an over for 15 minutes at 180°. When the avocados are ready, sprinkle over with the chopped chives and, if you wish, with chilli flakes.

Cooking directions:
Use a potato peeler to slice cucumber in wide strips. Dice New Whites and wrap in cucumber strips. Garnish with Ajvar relish. To enhance the flavour, serve with soya sauce in small sushi bowls.

4 tbsp extra virgin olive oil

Wash and dry pears and vegetables, cut them in wide strips; slice New Whites. Sprinkle all ingredients with olive oil and garlic, put in the fridge for 30 minutes. Fry on griddle pan or a BBQ on both sides until golden brown. Serve garnished with balsamic dressing and green salad leaves.
